I lucked out big time when I found this super simple eggless cookie recipe! It takes just a few minutes to whip up and can be modified in many way to suit your tastes and needs! Delicious, healthy, and allergen free!
2 very ripe bananas
1 cup oatmeal
1/4 cup (optional) mix-ins of your choice; we used raisins, but you can use chocolate chips, nuts, shredded apple, etc.
Preheat the oven to 350 degrees and spray a baking sheet with non-stick spray.
Mash the bananas and stir in the remaining ingredients. Drop spoonfuls of the dough onto a baking sheet and bake for 15 minutes, until cookies are firm and lightly browned.
I highly suggest that you use extremely ripe bananas (brown spots and all) otherwise, they don’t taste as good. Trust me on that one, I am speaking from experience!
